This is WAY late but: if you get down to San Francisco, I recommend a visit to Swan Oyster Depot, on Polk Street About twenty very uncomfortable stools, several varieties of oysters, cracked crab (watching the guys behind the counter break down a crab is a delight), beer or wine, and it's a family-run joint for almost 100 years now--the reason a lot of the people behind the counter resemble each other is that they're brothers There are other good oyster places in the city--Hog Island, in the Ferry Building, or Anchor Oyster Bar, in the Castro, are actually more comfortable, and Hog Island has a full bar (I like a vodka with my oysters) But Swan is as San Francisco as anyplace I know, and I've lived here since 1973 Comment from : John Burke |

Hi Ryky! I have no idea if you go back and review comments from older videos but I was wondering if the storage options you showed, not including the magnetic strips, will accommodate thicker & longer yanagibas or debas? For example, I have a 210mm deba that is really thick and wondered if the knife blocks had slots made for thicker knives Thank you for your expert tutelage! Comment from : Jerry Wolfe |

I really want to buy a magnetic knife bar but I rent an apartment Is it “safe” to use with 3M tape on the backside as opposed to screwing it into studs? The wall where I would mount it is very smooth plaster (plaster is VERY hard to patch, another reason why drilling holes is almost impossible given the rental scenario)brbrI would probably put 3 “large” knives and a petty on it Comment from : b1lf |

Also, knife blocks are unhygienic as you cant clean inside of them Eventually dirt from the knives will start to accumulate inside them and germs will grow Looks like this will also apply to the drawer block so be sure to clean your knives well before placing them in Comment from : whootiyoioiy |

I just found your videos I do have a question about the magnetic strips Does this damage the knife? I have heard that is somehow affects the knife at a different level Such as making the blade more “”breakable”” at the point where the magnet is in contact with the blade probably a myth the story is it “”re arranges”” the steel structure I’ve been asking this wherever I see them in use Comment from : Lee McGann |
I put some neodymium magnets towards of the inside of my cabinet, the handles hang behind where I do my cutting so it's pretty easy to grab them All it cost me was the magnets, glue, and maybe 15 minutes I also don't have a lot of knives, so I wouldn't suggest this for someone with more than 10 Comment from : deepwater-jew |
I took an olive serving plate and made it into a magnetic knife holder Solid wood with neodymium magnets epoxied into a slot I machines into the back of the plate, looks really nice in my kitchen and also very functional since it is about 24 inch long :) I like the walnut ones in this video too though! Great videos THe knife block that is to your far right is one that I do not recommend Let me explain I live in Rio de Janeiro (hot, humid and at times and in some places a BIG breeding ground for cockroaches) Although I clean my knives as clean as possible, over the years maybe some of our maids have not been so meticulous in cleaning them One day I looked down into the bowels of the knife block and it was infested with live baby roaches I threw it in the rubbish immediately and never bought another one of those blocks Keep up the good work Comment from : Greg Johnson |
Have you tried the Dalstrong Phantom series spiral magnetic block? Comment from : Timothy Sweezey |
Since I like to putter, I'm wondering about a thin (1/8 in - 1/4 in) layer of cork on the face of a magnet bar We have the (stainless?) steel metal bar and I'd like to prevent the slippingbrALSO, I think ours is also from IKEA and the magnets are mounted bhorizontally/b which tries to pull the knives horizontal, too (magnetic lines of flux and all that "in-the-weeds" nerdy stuff) It irritates me So - if I were to obtain/make my ideal - I'd think in terms of a bunch of vertically-oriented bars (or disks with lines of flux/poles oriented vertically) behind the cork-covered face Yes, no, maybe? :) Comment from : Mark Hartwig |

Thanks for the link to the knife magnet, I have a fairly small one from Ebay and it barely holds anything, certainly no any of the thinner blade knives I will buy one of the Knife magnets you recommend as I also like to buy a range of different brands and types of knives and the knife magnet is most convenient for me, it also doesn't take up bench space as my knife block does Comment from : MaZEEZaM |
I really like the cork solution as long as you have a spare draw Comment from : MaZEEZaM |

Re oysters: Not Sacramento, but if you get to Charleston SC, check out Bowen's Island Restaurant $30-ish for all the oysters you can eat brSC oysters are not the samer as the ones we get in New England or CA Instead, they come as a big lump of oysters that have each attached to three to ten other oysters The restaurant steams 'em, so they're not impossible to open, but it's still a puzzle to figure out where all the individual oysters are in a particular block/lump, pop 'em open and slurp Expect to spend at least two hours (took me more like three) to eat your fill Comment from : Bob Koure |
well, now I have an answer to my Chinese vegetable cleaver storage problems: magnets!
